Ingredients for 6 Servings

5cupschicken or vegetable broth
2cupsbutternut squash, seeded peeled and cubed.
1cuponion, chopped
1garlic clove, minced
2tomatoes, peeled and chopped
1medium carrot, chopped
1cuplentils
0,25white wine (optional)
2tbsplemon juice
1celery stalk, chopped
1tbspcurry powder
1bay leaf

Preparation

Combine 5 cups of broth and all the remaining ingredients in a large heavy saucepan or Dutch oven. Bring to a boil, then simmer, stirring occasionally until the lentils and vegetables are tender, about 45 minutes. Season with salt and pepper and add additional broth, if thinning is required. Yummy!
