From Chef Richard: A hardy variation on the traditional quiche, this tart features the early flavours of roasted, caramelized cauliflower, the sweetness of onion-apple jam and the distinctive flavour of Gruyere cheese. The tart is light and cheesy with a ricotta-egg custard as the base with a wonderful flaky tart crust. Can be served either hot from the oven, or at room temperature; serve at lunch of dinner with a green salad or maybe some pickled vegetables.
