About Us
Neat Coffee Shop is located in the old schoolhouse in the centre of Burnstown. We opened our doors in June of 2008 with our fresh-roasted Fair Trade coffee, and then added wood-fired oven Pizza, and sweets.


Everything we do and make is centered around three core tenets:


Quality Approach. We strive for high quality coffee beans, food and goods. We select premium ingredients and work in small lots to give us control over the result.


Fairness. We are aware of the origins of our produce and products. We take care to ensure we purchase items and produce that are made fairly. We train and pay our employees well and encourage their growth.


Community. We are active members of the community. Local trades people were used exclusively in the renovations. Richard White a local designer was utilized to design the space (present and future). We support the artist community as we can and we aim to have a local option for every item we sell. Our local summer market is our way of trying to get more local products into the hands of more people.

Ingredients
We use premium ingredients and always local when it is available. Locally, we use elk from Carp, bison from Pembroke, Beef from Cobden, Honey and eggs from White Lake and honey from Tanglewood as well. We use vegetables from Springtown, White Lake and Cobden in season.

Practices (our standards for raising or making our products)
We use no preservatives, our products are all natural. Everything is prepared in a health inspected kitchen. We make small lots that allow us to consistently control our quality. Our coffees are all fairly traded, some Fair Trade Certified.

Highlights this Month
Sumatra Lintong Grade 1 represents our first Sumatran roast (it will be our second actually as we experimented this week). Quite nice.
The Ethiopian Decaf last month has run its course. We offer in its stead Guatemalan HueHuetenango Water Process Decaf in it's place

#1090 El Salvador Siberian Estate Bourbon Full City+ Coffee Beans
Order number of jars. It's a versatile coffee, which works well in espresso and drip type brewing. I did a very light City roast and the cup was lemony, sweet, zingy, mildly floral. I did a City + roast that had creamy nut tones with ripe orange underneath, and a cinnamon accent. I did a FC, and FC+, a light Vienna, and with each the cup had great character, chocolate tonality becoming more intense and bittersweet as the roast darkened, but never becoming flat, ashy or carbony. The wet aroma has a hoppy floral note and some malt sweetness in the light roasts, like a mild IPA brew. I highly recommend this lot for espresso, SO Espresso if you can extend the roast, finish slowly, tone down some of the brightness a bit in the final extraction. We love it as an espresso blend base, rather than soft Brazil coffees. It gives a classic espresso bittersweet flavor, and performs so well in the roaster.

#1961 Ethiopia Guji Shakisa Light Roasted Coffee Beans Ethiopia Guji Shakisa Light Roasted Coffee Beans
Order number of jars. This is a very unique flavor profile. From the dry grounds, jasmine-violet floral scents are clear, as well as ginger, malt sugars and honey. My lightest roasts have a graham cracker wet aroma (nice, but perhaps a bit too light on the roast there). City+ level has even more violet blossoms, more honey sweetness, maple syrup on pancakes, and sweet spice notes of ginger, and herbs. Those floral jasmine tea notes and spice accent are so clear in the cup. Along with a bracing lemony acidity, they provide the high toned piquant character for this coffee, particularly in the lighter roast levels. The first time I cupped the arrival sample, my taste impression coalesced under one term; "Gingerbread." It perfectly described the spicy sweetness, underpinned by honey and caramelized sugar. While the cup has a distinct sweetness, it is restrained, not a full, round sweetness. In fact it seems moderated by bergamot citrus, as with the slightly bracing, tannin tea-like notes of Earl Grey. The body is fairly light and increases as the cup cools, with a waxy mouthfeel and a suggestion of walnut oil. It's a very aromatic, delicate and distinct cup. It's not a powerful or aggressive coffee.

Order number of jars. El Tambor refers to a distinct thumping sound one might have heard years ago as an underground water source led to a waterfall that sounded like a continuous earthquake on parts of the farm. Victor Calderon seized a chance to buy the farm; challenging the mine firm who held a lease on the land. He leveraged an improperly noterized lease and the fact that the mine had not produced for years to his advantage. All the dangerous shafts were secured and rehabilitation of mining areas with new coffee plantings has occurred. The old existing Bourbon and Caturra trees have been shored up with new plantings of Pache and San Ramon cultivars. In the 2010 Cup of Excellence competition, it was 7th place for El Tambor. Butterscotch caramel; an intense sweetness in the dry fragrance of El Tambor. There is vanilla and a fudgesicle-like chocolate note. Lighter roasts have tamarind and tropical fruits. In the wet aromatics; pineapple, tangerine, a bit of mango. On the break there is bittersweetness. The cup is a sum of the aromas; butterscotch and brown sugar sweetness with layers of tropical fruit, apple and tamarind. It's a big, round cup, with prominent acidity. The finish tends toward bittersweet and shortish. There is some syrupy sweetness as the cup cools. Roasted within the 2 days prior to delivery. Indicate if you'd like it ground and we will;-)

Order number of jars. This particular AA lot is extremely nice. The dry fragrance is sweet, laced with orange fruit notes, especially vibrant at City+ roast. The Kimel AA comes to life in the wet aroma. Adding hot water to the grinds and sweet layers of orange marmalade emerge, with a hint of pear and cinnamon accents. I was impressed how the clean brightness is stable through all the roast ranges. City+ roast has apple and apricot flavors as well as floral touches (honeysuckle). It's quite vibrant and high toned at this roast level, perhaps not what people think of from Indonesia coffees but if you like our wet-processed Sulawesi offerings you will appreciate the lighter touch on the Kimel AA. While the darkest roast I tested did not breach into 2nd crack; sarsaparilla and spice domintate, but it has some slight piney-foresty tastes, hinting at its origin as a near-Indonesia coffee. In between these two roast extremes, the cup was very balanced, possessing ample sweetness, fruit, and spice in the finish.
