Pork that melts in your mouth, that is succulent and juicy when cooked? We offer prime pasture pork cuts for sale to the general public and the trade. If you have any questions about our operation or our stock, please read on. Pork of Yore is on a farm located in the Ottawa Valley, about 100 kilometres west of Ottawa. The farm is one of the oldest built by Scottish Immigrants who settled here in the 1850's. The small community became known as "The Scotch Bush". We purchased this farm from an elderly couple who had lived here their entire married life of over 60 years. They hadn't done much farming in the recent past. A good portion of the farm was overgrown with scrub trees and juniper bushes. The result of this is an organic, pristine environment with spring fed, cold, clean, plentiful water and land that is virtually chemical free. The Heritage Breeds are great foragers. Since the farm had grown up over the years we decided to raise Heritage Breed pigs outside in large areas of approximately five acres for five full grown pigs. We purchased our first Heritage Breed piglets in 2008, Tamworths, Berkshire, and English Large Blacks. This is Slow Food. (see www.slowfood.ca) Now, one year later, our first offerings to the public can be purchased by individual frozen cuts at the Carp Farmers' Market every Saturday. We are also accepting reservations for Fall Freezer Orders through the co-op. Browse through our Products for Sale Ingredients Government Inspected, Pasture Raised, Heritage Breed pork products. Spices added to sausage by the abbatoir and smoking of bacon, ham and hocks also done at the abbatoir. Practices (our standards for raising or making our products) Our pigs are grass fed, free range, at liberty to exercise and root or just lay about soaking up the sunshine and natural Vitamin D. They have small arks and big piles of straw for protection from the elements. Even in the winter, at 30 below, you'll find them outside their little huts basking in the low winter sun on a bed of nice clean fresh straw. Given enough room, pigs keep their food, water and rest areas as far away from their toilet as possible. Our pigs do not have an unpleasant odour and neither does our farm. They are rotated through the pastures in the summer to keep them and the land they graze on healthy and in good condition. The grazing and rooting of the pigs serves to refresh the land rather than drain it of nutrients. A single strand of electric fence contains the pigs in their respective large pastures. Our breeding herd is all registered purebred stock. The sows have strong maternal instincts and farrow naturally outside in a place of their own choosing. They bring their piglets back to the herd when they deem it best to do so. We do not clip teeth or tails. We do not wean before eight weeks of age. We feed our rare breeds alfalfa hay along with our own mix of non-medicated milled wheat, barley, corn and soy supplements. We do not use artificial growth stimulants, animal by-products or chemical additives. The result is healthy, safe, succulent and delicious pork. Pasture production is not an aberration, but a historical norm. It is the first way and the only proven and lasting way to best serve and protect the land, the animals, and those people who eat pork. Additional Information The Tamworth pig was inducted into Slow Food Canada's "Ark of Taste" on May 1st, 2009 joining Red Fife Wheat, the Chantecler Chicken, Canadienne cow, and the Saskatoon berry. http://www.theglobeandmail.com/life/article1139588.ece These rare breeds are becoming extinct. The Tamworth pig is listed as "Critical" (1-35 breeding animals registered)by Rare Breeds Canada. The Large English Black as "Endangered" (36-115 breeding animals registered) The Berkshire pig has enjoyed a resurgence of popularity at fine dining tables in Canada which has helped increase it's numbers to the point whereby it is no longer listed. This proves, the only way to save the Rare Heritage Breeds and their precious genetics is to eat them and support the family farms who have made it their duty to raise and protect the genetics so they will once again flourish. We are accepting freezer orders for fall 2009. There are limited quantities available so please contact us early to reserve your side of Pork of Yore.
